effects of temperature

    The weather has changed and the house is cooler. I have a temperature strip on the brewing container and it looks like the nighttime temp is only 68. My brew is not culturing....just hanging there. Any suggestions?

    My house is always cool; we live in a ground level basement suite, ceramic tile floors, and a husband who keeps lowering the temperature and turning it off at night (temps are down to about -10C these days). I usually let my kombucha brew for at least two weeks, or until I like the flavour.

    hmmm... so I am just a tad over zealous! I will try to exercise patience. Thank you for your response! This geeky thing of fermentation is just so neat! I love watching how all of the ferments respond to the conditions around them...we should pay attention...they may be smarter than we!

    I don't know about smarter but definitely responsive to their environment.
