Scoby hotel ph

    i just checked the ph in my scoby hotel jar and it is 3.9 Shouldn't it be lower than that?
    I read about adding white vinegar but not sure about doing this with scoby

    pH of Kombucha should be below 3.5, ideally.

    Between 2.8 to 3.3 gives the ideal flavors. 3.0 is the usually balance recommended.

    above 3.5 and the tea is less fermented (pH of 5 is basically the pH of a new batch of sweet tea).
    2.0 and below and you get very sour Kombucha (Kombucha vinegar).

    So there is a range.
