SCOBY trimming

    I got my first SCOBY from a friend. But it's quite thick so thought I'd peel off the older layers. Only problem is I don't know which side was young and which was old. Does it matter?

    I'll also need to trim the SCOBY down to fit in my jar. Would a cookie cutter work ok?

    Often, you can see some yeasties on the bottom and the top may be smoother. I don't think it will matter which part you use. I wouldn't trim it unless it's way too big. I've used a 6" scoby in a 4" jar with no problem. It kind of floats sideways or tilts a bit.
