    Salt and Water

    Pour the salt inside the water and stir to dissolve completely. Set aside.

    Prepare the carrots

    Wash the carrots thoroughly and then slice them in round slices.

    Add to Jar

    Divide the carrot slices equally into each until they are all gone.

    Add the Liquid

    Pour the salt water over top of the carrot slices and fill the jar until it is 1 inch from the top.

    Note: Be sure that all carrots are submerged before continuing on to step five.

    Cover

    Place a lid onto the jar that is tight or use an airlock lid on certain containers. If you don’t have a tight fitting lid, you can use a coffee filter by folding it in half and then placing it over the opening. Secure the coffee filter with a rubber band.

    Fermentation Starts

    Place the jars in a dark area normally in the kitchen that stays cool, between 60-70 degrees. Allow the mixture to set between 3 and 8 days.
    Note: Burp the lids daily in order to remove most of the excess pressure build up.
    Note: You will want to inspect the carrot slices and eventually taste them daily until you get the right texture and taste.

    Store

    Once the carrots are complete, you can then store them in a cold area such as a cellar. If you don’t have a cellar, place them in the refrigerator instead. Remember, as the carrots sit, the fermentation process still continues but at a very slow rate.
