Good Morning Kefir Muffins

    It’s hard to get started sometimes in the mornings. You may have a routine but it won’t always work or you may have had a hard time sleeping the night before and find it too difficult to get yourself awake. Maybe you just don’t like your job for whatever reason and you dread every day you have to get up and go back. Studies show that if you have a nutritious breakfast, then chances are, your day is going to go a little better. This recipe is a great way to start your mornings and best of all, you can fix them while you are in the kitchen preparing dinner the night before or make them ahead of time on Sunday so you can simply grab-n-go all week.

    Instead of using whole or reduced fat milk for this recipe, you need to use milk kefir that you have made up ahead of time. Milk kefir is made with kefir grains that you have purchased. When preparing this recipe, use as many organic ingredients as you can in order to create a healthy and balanced muffin that will benefit you in every way.

    You can add additional ingredients to personalize your muffins, for example, raisins, chocolate chips, strawberries, blueberries, pecans, walnuts, etc. Just sprinkle the added ingredient once you have the mixture combined in the bowl.

    Preparation

    Take this time to preheat your oven to 375°. Prepare your muffin tray by buttering each cup or lining it with muffin/cupcake liners.

    Mix dry Ingredients Together

    Add the baking flour, baking soda, baking powder, and salt together and stir to mix thoroughly.

    Add liquid ingredients together

    Add milk kefir, honey, butter or coconut oil, and beaten eggs together in a bowl and stir until all ingredients are combined.

    Bring ingredients together

    Pour the liquid ingredients into the dry ingredients and stir thoroughly.

    Add the additional ingredients

    Add the additional ingredients you would like for your muffins in this step; apples, chocolate chips, berries, etc.

    Pour Batter

    Using a large spoon, place the batter into each cup or liner until all are filled approximately ½ to ¾ full.

    Bake it

    Place the muffins into the oven and allow them to bake for approximately 18 minutes. Insert a toothpick into one muffin to see if it comes out clean. If it does, the muffins are done. If after 18 minutes the toothpick is not clear, keep baking the muffins for however long it takes.

    Cool It

    Remove the muffins from the oven and allow them to cool before serving them or packing them into containers or bags for the week.
