Basic Kombucha Recipe
You will need to brew a batch of kombucha for this recipe. To fully make kombucha, you will need to go through two fermentation process. For the first fermentation, you will need:
- 1 stock pot
- Small funnel
- 1 gallon glass jar
- 6-8 ounce plastic water bottles or soda bottles, washed and cleaned thoroughly.
- 3 coffee filters
- 1 large rubber band
Boil the water
Remove from heat and add tea bags. Allow it to brew until it has reached room temperature.
Mix it all together
Remove the tea bags, add the sugar and two cups of starter and stir until dissolved. Pour the tea mixture into a gallon size glass jar and add the scoby. Place the coffee filters over the jar and add the rubber band to secure it. This will allow enough air into the jar but not anything else.
7 – 10 days
Start First Fermentation
Prepare the tea for the second fermentation
For the second fermentation, remove the scoby from the tea and pour the tea into six – eight ounce bottles that you have washed out and cleaned. Place the lid onto the bottles and allow to sit for three days in a dark place away from direct sunlight. This fermentation process will be done when you squeeze the bottle and the sides feel rock solid. Refrigerate until you are ready to use.
Mix it all together
Add the mayonnaise, honey, celery seeds, and kombucha together and stir until smooth then add the cabbage.
