Ingredients

Adjust Servings:
1 liter of water filtered preferred
1/8 teaspoon of salt sea salt unrefined preferred
½ teaspoon of molasses or you can use 2 teaspoons of maple syrup
¼ - ½ cup of water kefir grains purchased from a reputable source
¼ cup of sugar organic cane, sucanat, or rapadura
Liquid minerals optional and only a few drops are needed
½ egg shell clean and crumbled – optional

    Heat a cup of the water

    In a small pot on the stove, add one cup of the water and bring it to a rolling boil before removing it from the heat.

    Add sugar, salt, and syrup

    Add all the sugar, the salt, and the syrup to the hot water. Stir until dissolved

    Let Cool

    Allow the mixture to cool to room temperature

    Pour the mixture

    Pour all of the mixture from the pot to the jar, and be sure to get it all in there.

    Add shells, grains, and water

    Add the egg shells if you want to use them, the water kefir grains, and the rest of the water.

    Add the lid

    Wipe the edge of the jar with a clean damp cloth and place the lid on. Be sure that the lid fits the jar tightly.

    Let it set

    Allow the mixture to set from twelve hours to thirty-six hours before it is done. There are many factors that will play a role in how long it takes your kefir water to complete; the temperature of your home, what you are baking or cooking at the time, and the kefir grains. You can begin checking the kefir after twelve hours. If you let it go too long, you won’t be able to drink it. Once the drink tastes sweet to you, it’s time to finish the process.

    Drain off the kefir grains

    Using a strainer, strain off the grains, separating the water from the grains. Place the grains into another batch you are preparing to make.

    Measure out the lemon juice and add it to the water.

    Place the lid back on the jar that now has the flavoring

    Place in a dark area

    Place the jar back into the dark area of your kitchen for twenty four hours so the flavoring has the chance to mingle around and infuse.

    Now that your kefir water is flavored with lemon, you can now place it in the refrigerator to make your delicious drink cool before you enjoy.
