Ingredients

Adjust Servings:
1/4 cup of sugar organic Cane, sucanat, or rapadura
1/8 teaspoon of salt unrefined sea salt
1/2 or 2 teaspoon of molasses teaspoons of maple syrup
1/2 egg shell cleaned and broken up
1/4 - 1/2 cup of water kefir grains
1 liter of water

    In this recipe, the orange taste doesn’t come from the juice, it comes from the orange peel. You may not know it but orange peel has so many benefits when you include it into your diet. What can a simple orange peel offer you? First, the orange peel should be grown organically in order to be healthy. When you add orange peel to your diet, your eating over one gram of protein, potassium, vitamin A, and riboflavin, and about 40 mg of calcium.

    Orange peels also contain the important Beta-Carotene, which is available in orange as well as yellow fruits and vegetables. The body can convert beta carotene into Vitamin A, which can aid the immune system and vision health.

    Boil water

    Bring one cup of the water to a boil and then remove from the heat

    Add sugar, salt, and molasses or maple syrup

    Add the organic sugar, sea salt, or molasses or maple syrup in the hot water and stir.

    Allow mixture to cool

    Allow the water mixture to cool completely before proceeding.

    Add to Jar

    Pour the cooled down mixture into a glass canning jar.

    Add egg shells, kefir grains, and water

    Measure out the kefir grains and pour them into the jar, along with the egg shells and water. If you are not adding egg shells, just add kefir grains and water. If you are adding egg shells, make sure they are cleaned and crumbled down to a powder.

    Add the orange peel

    Add five to six stripes of organic orange peel to the mixture containing egg shells, kefir grains, and water.

    Place lid on Jar

    Place the lid on the jar to seal all ingredients inside together.

    Place the jar in a dark area

    During this time, the mixture will need to be away from light. If you use your kitchen often, it will most likely not take the full thirty-six hours however if you have a cool room, it will most likely take a lot longer.

    Drain the kefir grains

    It's now time to separate the kefir grains from the kefir water. Save the kefir grains for the next mixture.

    Remove and refrigerate

    Remove the orange zest from the mixture and refrigerate until cold.
