2 pounds of tomatillos
2 jalapeno peppers
1 white onion medium sized
2 cloves of garlic fresh garlic preferably
1 Tablespoon lemon juice freshly squeezed
1 teaspoon sea salt
¼ cup cilantro
¼ cup of water kefir

Make Your Own Salsa Verde


    Next time your family wants taco night, treat them to this delicious salsa. Its chunky, it has a little bit of a kick to it and its healthy too! This recipe would also be great if you need to bring a platter to the next family gathering with some tortilla chips on the side.

    If you like Mexican dishes, or if your family indulges in taco night, you will want to add this recipe to the mix. With a great combination of ingredients like these, they come together perfectly during the fermentation process to create a great tasting salsa that compliments your dish, not overpowers it.

    You wont need to cook these tomatillos before you begin; some prefer to do this while others don’t. If you want to give your salsa Verde a mild smoky taste, then you will want to roast them just a little bit prior to preparing this recipe.


    There are many reasons to add tomatillos to your diet each day. Some of these reasons includes:

    Improves digestion – like most other vegetables, these tomatillos are high in fiber which can help the digestive tract move the way that it should. With a healthy digestive tract, you experience less gas and bloating as well as constipation. it also decreases your chances of colon cancer and gastric ulcers from developing.

Because tomatillos are high in nutrients, low in calories, and with the high fiber found inside, you will feel more full and require less food per meal which will give you a chance to succeed in your plan to lose excess weight.

    If you battle for energy each day, you will appreciate the tomatillos. The niacin found in this veggie is responsible for helping the enzymes process the foods that you eat and turn those foods into energy. If you dont have a diet rich in niacin, you may be struggling for energy.

    Jalapeno peppers work best for this recipe. While this type of pepper is a little more spicy than others, you will appreciate that little extra kick will taste good when combined with all the other ingredients listed below.


    While yellow onions are good, you will want to use white onions for this recipe. The white onion brings a little kick to the mix but not as much as the yellow would. However, if you don’t have a white onion around, feel free to use the yellow instead.


    One of the best ways to enjoy cilantro is mixed in a Mexican dish such as this. Cilantro is healthy and can help the body in many ways:

    Prepare the Tomatillos

    Remove the husks and cut the tomatillos in half.

    Prepare the Peppers

    Using a pair of gloves, wash the peppers and pat dry. Cut the ends off of the peppers and then cut them long ways. Remove the seeds.

    20 minutes

    Broil Tomatillos and Peppers

    Place the tomatillos and the peppers cut side facing down onto the baking sheet and broil them until skins look charred and bubble up a little.


    Take them out of oven

    Remove from the oven and place in a separate container to cool enough to pick up.

    Remove Skins

    Scrape the charred skins off but if you don’t get all the skin off, that is okay.

    Prepare the Onion

    Peel the outer layer of the onion off, cut it into large pieces.

    Place all ingredients together

    Place the onions, peppers, tomatillos, cilantro, lemon juice, and garlic inside the blender and finely chop the ingredients together. Chop until you reach the desired salsa consistency. Some like it chunky while others prefer a smooth blend.

    Add Salt

    Pour the salt into the blended mixture to taste

    Add Water Kefir

    Pour the water kefir into the container.

    Give it a quick jolt to combine everything.

    Add to Jars

    Place salsa equally into two quart jars.

    Add Lids

    Place a tight fitting lid on the jars, such as an air lock lid.



    Allow the mixture to set at room temperature for three days at 60-70°F.



    Refrigerate until ready to enjoy!
