From the start of the first leaf falling to the ground, you know that cool weather is soon to follow. When fall arrives, you may want your drink to have cinnamon or pumpkin, or both. Did you know that you can add this delicious fall favorite to your Kombucha?

If you have been brewing your own Kombucha, you know how delicious it can be. Imagine adding flavoring to it to give your taste buds a variety of flavors to savor. Adding flavor, such as pumpkin spice, to your Kombucha is not only healthy but great tasting too.

To get started, you will need a batch of already made basic Kombucha. If you have never made Kombucha before, you want to make sure that you have all the ingredients and equipment needed. Start with a clean work station when making Kombucha. Cross-contamination of good bacteria versus bad could make you sick.

    Make Kombucha (Basic Recipe)

First, you will need to add the sugar and water to a pot and bring to a boil. Once the water is at a rolling boil, remove from heat and add the tea bags or loose tea. Once the water has cooled completely, you can then remove the tea and place the mixture into a glass jar. Add the remaining ingredients and place the coffee filters over the top of the jar. Place the jar into a dark place and allow to ferment for seven days.

Note: As soon as you remove the Scoby, start your next batch of Kombucha so you can keep it on hand.

When to Add Pumpkin Spice Flavoring

Once the seven days are up, you have just completed the first fermentation. Now you can add the flavoring to your basic Kombucha recipe. Don't add it before the first fermentation is complete.

    5 minutes

Make Homemade Pumpkin Pie Spice (optional)

You can make your own pumpkin spice or buy it already put together in the grocery store.

Making it yourself and mixing the fresh spices together yourself gives your Kombucha brew a fresher aroma and more potent taste. We recommend this over buying pumpkin pie spice.

If you want to make your own pumpkin spice, you will need:

    • 3 Tablespoons of cinnamon, ground
    • 2 teaspoons of ginger, ground
    • 2 teaspoons of nutmeg, ground
    • 1 ½ teaspoons of allspice, ground
    • 1 ½ teaspoons of cloves, ground

    Mix all together and stir.

If you don't want to add sugar to your pumpkin spice Kombucha, you can substitute the sugar with honey or omit the sugar all together.

    10 minutes

Gather all flavor ingredients for the second ferment.

This includes the fresh ingredients needed and the freshly made pumpkin pie spice in the previous step OR store bought pumpkin pie spice.

you will need to make pumpkin spice flavored Kombucha.

    5 minutes

    Fresh Ginger

Grate enough ginger to make ¼ teaspoon.

    5 minutes

    Bringing the Flavor Together

Mix all the ingredients together in a bowl. Mix thoroughly until all spices are combined.

If you don't want to add sugar to your pumpkin spice Kombucha, you can substitute the sugar with honey or omit the sugar all together.

    1-3 days

    Second Ferment It

During the Second Fermentation stage, you will remove the Scoby and keep for the next batch of Kombucha. Add your flavoring while the Kombucha is still in the gallon sized glass jar for easy stirring or you can pour the Kombucha into rinsed out and sterilized soda bottles and add the flavoring only to certain bottles. Label all bottles that you add flavoring to so you will know which ones has it and which ones don't.
Allow the bottles to sit in a dark place for three days. During this second fermentation process, carbonation will occur. On the third day, you can sample your pumpkin spice flavored Kombucha to see how it taste.
Keep your flavored Kombucha refrigerated until you are ready to drink. When the days are short and the cool air consumes your day, may the taste of pumpkin and cinnamon cradle your Kombucha with every sip.
